A New Kind of Craft: Celebrating Pacific Northwest Non-Alcoholic Spirits

I enjoy adult beverages for their sensation, balance, and taste, not for the buzz. When I’ve reached for a glass of wine, a craft beer, or a well-made cocktail, it’s because of the sophistication they bring and how beautifully they pair with food. What I’ve really been after is something that enhances the experience and engages my palate.
Alcohol does that well. It adds complexity and movement across the tongue. But I’ve always believed there had to be a way to enjoy all of that without the downside of the booze.
It turns out I’m not alone.
Alcohol consumption in the U.S. is at a 90-year low, while adult non-alcoholic beverages are surging. What was once considered a niche has become a movement driven by intention, flavor, and craftsmanship rather than abstinence alone.

The Pacific Northwest: A Natural Home for Non-Alc Craft
The Pacific Northwest has long been the cradle of craft beverage culture. From world-class Pinot Noir and single-origin coffee to hop-forward IPAs, kombucha, and a robust craft distilling scene, this region understands flavor, process, and place.
We also understand the journey. Many PNW food and beverage movements begin with a few early adopters before becoming widely embraced—just look at our dynamic vegan food culture or the seamless integration of gluten-free options. Non-alcoholic spirits are following a similar path and the results are exciting.
Here are a few of our favorite PNW non-alcoholic spirit producers who are changing what’s in your glass.
Wilderton
Hood River, Oregon
A true pioneer in non-alcoholic spirits, Wilderton is distiller-crafted with the same care and intention as traditional spirits. Their Bittersweet Aperitivo offers plenty for the palate to explore: layered bitterness, subtle sweetness, and a long, earthy finish. There’s real movement and interplay to unfold.
How we serve it: Pair with Dappled Floral Tonic Water and a fresh orange slice for a beautifully balanced, aperitivo-style serve.

DHŌS
Newberg, Oregon
From the Ransom family of wines and spirits, DHŌS brings a refined sensibility to the non-alcoholic space. Our standout from the lineup is their Orange Liqueur—ideal for those who lean slightly sweeter but still want dimension without heavy botanical layering.
How we serve it: Pair with Dappled Citrus Tonic Water and a splash of pineapple juice for a bright, approachable spritz.

Pathfinder
Seattle, Washington
Pathfinder is one of the premier non-alcoholic spirits in the United States. Inspired by old-world amari traditions, it’s earthy, complex, and deeply satisfying. This is a spirit for slow sipping and thoughtful occasions.
How we serve it: Paired with Dappled Aromatic Tonic Water, it makes an engaging, contemplative highball that feels every bit as intentional as its alcoholic counterparts.
